1 pouch (250g) Pre-cooked brown rice, quinoa, or mixed grains (or 2 big cups of leftover rice)
1 tin (400g) Mixed beans, black beans, or chickpeas (drained and rinsed)
2 big handfuls Fresh baby spinach or chopped kale
1 jar of good quality tomato passata or a tin of chopped tomatoes
1 tbsp Extra virgin olive oil
1 tsp Garlic granules and smoked paprika
The Protein Accent: A tin of high-quality tuna in olive oil (drained) or pre-cooked chicken breast slices tossed in at the end.

Method

Method
Heat the base: Drop the olive oil into a large frying pan or skillet over medium heat. Dump in the drained beans and the grain pouch.
Sauce and season: Pour in the tomato passata, garlic, paprika, salt, and pepper. Stir it all together for 3 to 4 minutes until everything is piping hot.
Wilt and serve: Stir in the spinach or kale until it wilts into the hot sauce (takes about 60 seconds). Stir your tuna or pre-cooked chicken through to warm it up, and dump the whole thing into a massive bowl.
Optional Calorie Booster: Top with a handful of pumpkin seeds or a spoonful of store-bought hummus.
